These will absorb the flavour and make amazing dishes all on their own later; 5 - Use a decent shaver to get the most out of them and don't serve too cold. They need to fuse with hot food to get the most out of them; 6 - The farmer reckons that they will freeze fine too. If you do freeze them don`t defrost just shave onto the pasta frozen and la viva loca will take care of the rest...

We have scoured the Italian landscape looking for the best truffle paste we could find. (Nothing is as good as fresh but unfortunately they are seasonal and often unattainable.)
